You'll need to edit /etc/fstab, but you'll also need to edit either 
/etc/lilo.conf or /boot/grub/menu.lst (depending on whether you're using LILO 
or Grub to boot your system) to change the disk passed as the root disk to 
the kernel.

The latter may not be necessary if you're running RH9 or Fedora, as apparently 
RH added the disk label patch to the kernel so it scans for a disk with the 
label of '/'.
