Well, quite simple at its most basic level.  Depends on the antenna though.
Some antennas (e.g. a common dipole) are sensitive to the E field and pick
it up directly (statically induced voltage).  An E field causes a potential
difference along the antenna (i.e. voltage). 

Other antennas use the principle of magnetic induction from the magnetic
field component of the EM field.  A varying magnetic field produces a
voltage in a conductor.  The same principle that generators and alternators
use to generate electric current.
